Tiramisù

Layers of love.

Did you know that in Italian, the word tiramisù is originally a phrase meaning “lift me up”? That’s because it’s exactly what this delicious dessert does to you! But not any tiramisù can do that. It has to so light that you almost feel like you are eating sweet air. There are so many recipes for tiramisù, but this is the most authentic one, made with raw eggs, so make sure you use the freshest organic eggs you can get. Another thing, do not even think about replacing mascarpone cheese for something else. No whipped cream either!

Ingredients

These quantities make up for 8 good portions. You can half them and still get 6 small ones. You need:

  • About 300g ladyfingers
  • About 350mL strong coffee
  • 4 eggs
  • 100g sugar
  • 500g mascarpone cheese
  • Cocoa powder

Procedure

  1. Making tiramisù is easier than you think. Start by separating the egg yolks from the whites and putting each in a different bowl.
  2. Add about half the quantity of the sugar to the yolks. Beat with a hand mixer until the mixture becomes a light lemony yellow color.
  3. Add the mascarpone and beat it into the mixture in 3-4 steps. Make sure you have no lumps at the end. Clean your hand mixer before you move to the next step.
  4. Start beating the egg whites while gradually adding the other half of the sugar. Continue until you reach hard peaks.
  5. Gradually fold in your beaten whites to the yolk mascarpone mixture. Do this step carefully to avoid losing all the air you incorporated into the whites. Remember, we need the final result to lift you up! Once this is done, your filling is ready.
  6. It’s time for assembly. Start by adding a thin layer of filling into the bottom of a baking dish.
  7. Next, dip your ladyfingers, one at a time, in your cooled coffee, for about 2 seconds, and arrange them in the dish.
  8. Add about half of the filling on top of the arranged ladyfingers. Spread until even but do not work the filling too much.
  9. Repeat the above two steps, alternating the sense in which you layer the ladyfingers.
  10. Finish by sifting some cocoa powder on top. Refrigerate for 3-4 hours then enjoy!
